10 oranges
2 litres (3 1/2 pints) hot tea, not too strong
2 lemons
1 cinnamon stick
120 ml (4 fl oz) dark rum
artificial sweetener, to taste
method
1. Peel a very thin layer of skin from one of the oranges and steep it in the freshly made hot tea.

2. Squeeze the juice out of all the fruit except one half orange and one half lemon. Strain both juices and heat gently with the cinnamon stick.

3. Slice the half orange and half lemon as thinly as possible and soak the slices in the rum.

4. When the orange and lemon juice reaches boiling point stir it into the tea, add the rum with the fruit slices.

5. Taste, and stir in artificial sweetener to taste, if liked. Remove the rind and cinnamon stick before serving.

Tea may be considered the national drink of Britain but it is only rarely used as an ingredient. A flowery orange pekoe would be particularly suitable here.

method

1. Crush the raspberries with the back of a wooden spoon and put them in a saucepan with the tablespoon of water; bring to boiling point and simmer for 3 minutes.

2. Cool, then combine with the other ingredients and put in an airtight container. Refrigerate overnight.

3. Strain the cup before serving.

The strained cup can be poured into a chilled vacuum flask for a picnic. As an alternative to the creme de cassis, try creme de framboise.

Ingredients

1/2 pound fresh strawberries, plus more to garnish
2 tablespoons white sugar
1 teaspoon vanilla extract
3/4 to 1 cup whole milk
1 tablespoon malted milk powder OR regular powdered milk (optional)
1 pint strawberry ice cream

Instructions

1. Gather your ingredients. Make sure you are using excellent strawberry ice cream. No fake flavors! No dye! If you have it, pull out some powdered milk or malted milk.

2. Hull the strawberries and slice them. Sprinkle the sugar over them and stir in the vanilla. Put the strawberries in the freezer for about an hour.

3. Put two pint glasses (or four smaller glasses) in the freezer to chill.

4. When the strawberries have frozen solid, pull them out and put them in the blender with 3/4 cup milk. (Make sure you scrape in all the syrupy juice that has accumulated at the bottom of the bowl.) Blend until the strawberries are pulverized. There should be no big chunks left at all.

5. Add the malted milk powder and blend. (Note: The malted milk powder gives just a bit of extra depth and a hint of malty flavor without turning the shake into a true malt. If you opt to use regular powdered milk this also will just add a bit of richness and creaminess. But the powders are not necessary.)

6. Take the blender jar off the motor, and add the entire pint of ice cream. Stir it into the milk and strawberries by hand. Put the jar back on the motor and blend thoroughly. If it won't blend very well or gets stuck, carefully add as much as 1/4 cup more milk. Stir or shake if necessary.

7. Pour the milkshake out into the chilled glasses and garnish with strawberries. Slurp immediately!

1. Put the ice cream and the milk in the blender and blend until the ingredients are thoroughly combined. A shake made with strawberry Haagen Dazs ice cream and whole milk will be much richer than one made with strawberry frozen yogurt and skim milk.

3. For a slight variation, add 3 tablespoons of malted milk powder to make a strawberry malt.

4. If you only like to have strawberry milkshakes occasionally but you want to make sure you always have the ingredients on hand, buy some strawberry syrup. It won't take up as much space as a carton of strawberry ice cream and it won't spoil easily. You can find strawberry syrup near the chocolate and caramel ice cream toppings at the grocery store. As long as you have vanilla ice cream and milk on hand, you'll have everything you need to make a strawberry milkshake whenever you want.

5. For a slightly healthier variation, use real strawberries with reduced fat or reduced sugar vanilla ice cream and skim milk
